National Cookie Day: Celebrating kooky cookies

What if I told you that I had a kooky cookie recipe that was not only delicious and filled with healthy ingredients, but it made you strong like Popeye? Would you be interested in that?

Kick in the Tush Club member Martha C., sent me the following spinach cookie recipe. She said that she got it from her sister, who got it from a friend, who got it from a neighbor! In other words, I have no idea where it originated, but it’s my turn to pass it on.

In honor of National Cookie Day, I present to you…

The Spinookie!

Ingredients:
1/2C firmly packed brown sugar
3/4C thawed frozen spinach (drain spinach before mixing in – or ought oh!)
2Tbsp butter
1C applesauce (read the label: applesauce can vary from 50 to 150 calories a cup)
1 egg
1tsp vanilla
3C steel cut oats (good for you!)
1C whole wheat flour
1tsp salt (optional)
1/2 tsp baking soda

Directions:
Heat oven to 350°F.
Mix wet ingredients together first.
Followed by the dry ingredients.
Gracefully and carefully drop spoonfuls of the mixture onto an ungreased cookie sheet
Bake 13 to 15 minutes or until edges are a nice shade of greenish brown
Remove to wire rack and cool

Enjoy!!!

    I’ve baked many a cookies, but this one is definitely a little kooky;).  I will try this one next week and post the results.  Thanks for sharing it.
