Hi all, I’m hosting a summer party and am looking for some recipes that aren’t too difficult to prepare. I’ll only have one day to prep/cook and I’m a little nervous about trying random recipes froma cookbook. What fail-proof, not-to-expensive crowd pleasers do you recommend?

How many people are you having to your party? I have been trying to support the local farmers this summer—great, fresh fruits and veggies. I just made caprese salad last night–big, ripe tomatoes sliced with fresh basil and fresh mozzerrella sliced on top. Then sprinkle with balsamic vinegar. You can prepare this before your guests arrive and takes just a few minutes. It is a great side dish along with some meat and veggies on the grill. I love a great summer dessert of fresh fruit. It makes for a very colorful and healthy dinner!
30 – 40 people. We have a great farmer’s market nearby. I found a pasts recipe in this month’s Susnet magazine that can be made in a large quanitity. Caprese and fruit salad sound great as well. I’m going to ask a few friends to bring side dishes or desserts.
The Barefoot Contessa was born on Long Island, a center of good summer food, and although I don’t think her cookbooks are perfect, I do think they present great ideas for summer entertaining, again and again. Her desserts are too heavy for me, but here is a one summer menu (with variations) I’ve used – Ina Garten didn’t invent these recipes but you can find versions of them in “The Barefoot Contessa Cookbook.”
Roasted Eggplant Spread (or just buy a really good hummus from the supermarket to serve with vegetables)
Gazpacho or Corn Chowder
Grilled Fish (if you’re near the sea) – otherwise a room-temperature roasted chicken
Potato Salad or Corn Salad or Fresh Coleslaw
Fresh berry pie or tart -
Another great cookbook for summer dishes comes from the Hamptons (you don’t have to go there to enjoy the recipes) is Ellen Wright’s “Bridgehampton Weekend: Easy Menus for Casual Entertaining.” Both of these were gifts to me from other “vibrant” women.
Thanks! I just saw egglants for $1 each at our local grocery store and was wondering if I could find something easy to make with them. I like the idea of soups, salads and pies – not too confident about cooking fish for a crowd, though. I may try a Mexican chicken salad that can be made the day before.
