    Got a great recipe from my mom called turkey lasagna. Basically make lasagna like you would normally, but substitute the tomato sauce with gravy, and the hamburger with turkey!  IT is awesome. I use cottage cheese instead of ricotta just cause it’s cheaper, and most important, dont forget the spinanch. (Frozen works great!)

     Here’s one that all ages seem to love! You can also include some of the leftover veggies you might have. My Healthier version of TURKEY CROQUETTES

    Cut up turkey meat into bite size pieces enough for 2 cups worth. Put in food processer. Add 1/4 cup stock (chicken stock or cube or broth or turkey stock/broth if you have it).  Add 1 egg, grated carrot and onion, salt, pepper. Mix in 1/4 cup bread crumbs. Shape into patties and bake in pre-heated 375 oven for 15-20  minutes /brown on top. Or heat olive oil in frying pan over low heat….should need no more than 4 minutes a side.

    ALTERNATIVE: This can also be done without a food processor.. Make a roue(butter/flour) and add stock. Cook on low heat , constantly stirring until thickened. Remove from heat. Add diced turkey and grated carrot and onion/salt and pepper. Proceed as above. 

    OR: You can coat the patties with bread crumbs and deep fry.

    Toasted turkey sandwiches and hot chocolate in front of the fire place.  This goes back to when I was a kid.  What’s that called “comfort food”.
