I have several VN women that I exchange recipes with on a regular basis, along with other ideas that have to do with baking, spices, cooking etc. We know so many of you VN women are watching your fat and calorie intake (I sin and ask for forgiveness later) so we just contact each other via E-mail or phone. This was the first recipe that I shared with the group.
I am asked at least 2-3 times a month to bake it for a friend or neighbor. My wife demands it every Sunday. I have been baking it for 25 years.
It is loaded with the good stuff, fat and white ingredients.
I don't drink, smoke or take drugs. So, if this is what kills me, I will die happy.
I hope you try it and ENJOY it. It is one of my most sacred recipes and I wanted o share it with you. As always, use the freshest ingredients you can find. It is also good as a dessert. I make fresh whip cream and dust it with nutmeg and add a sprig of mint OR for my wife, I add a scoop of Blue Bell Homemade Vanilla Ice Cream.
I am always on the lookout for a new recipe. I bake every day!
Good & Easy:
Blueberry Sour Cream Coffee Cake
1/2 C. butter - room temp
1 C. white sugar
2 eggs - close to room temp
1 T Almond Flavor
1 tsp. baking soda
1 tsp. baking powder
2 C. flour (I use White Lily)
1 1/4 sour cream
Mix together. I really just throw it all in and it makes a divine batter that is very aromatic. Batter will be creamy.
Rinse blueberries and dust with flour to help settle in batter. Gently fold into batter. Careful not to break up blueberries.
Mix 1/2 C. white sugar
1 T cinnamon
1/2 C. nuts of choice. I use pecans.
Lightly spray bundt pan. Pour 1/2 the batter in pan. Add as much cinnamon mix to taste. I add nearly 1 C.
I use the leftover for french toast. Add the remaining mixture.
Bake at 350 for 40-45 minutes. DO NOT over bake.
It should be a golden color.
After baking, set on cookie sheet to cool. I let it set about 30 minutes. That's all it will last around here. Garnish & enjoy.

Yum, what time is coffee?
Made this last night and just had some with my coffee, switch white flour with whole wheat and white sugar with brown sugar, 3 egg whites not whole eggs and lite sour cream....you're right....delicious.
Not sure what the changes made to taste but since I don't have anything white in my house I decided...what the heck! I also used walnuts and shaved almonds with a few raisins not pecans. Yummy, thanks for the receipe! One for my grand children on Easter Sunday at mimi's
cal mimi: Mad Fun! I allow myself this luxury, white ingredients and all. I have never been good at being strict with any one area of my life, with the exception of:never smoked, drank alcohol, or got into recreational drugs. Actually, I may take an "otc" 4 times a year for some sort of pain relief. I also am very physical every day. I do not work out in a gym. I let nature be my guide for each day. I recently just had to gasp, my cardiologist friend, just had triple by-pass. He is a vegetarian, ran 5 miles a day.
My secret is, NO STRESS. I just slam the door in it's face. Gently of course and with a smile.
I want to try your recipe. I have lots of folks I make this for that would welcome the change. The only fruit I have used is blueberries, and they are always fresh. But, then again. I could eat blueberries in my sleep. I will let you know. I do have WW flour. I'll just have to blow off the dust (insert BIG grin).

still chuckling....because I don't have a point of reference other than the one I made I won't know the difference between the brown and the white of things;) Let me know what YOU feel the difference is. I know my GK's are going to love this. Thanks again.

This sounds great. I remember having coffee cake whenI was young without fruit. It was delicious as well. I have also had it with apple. Can the recipe be tweeted either way?
How on earth do you not have stress? Sometimes it is there whether we want it or not.
I made this coffeecake today. Haven't cut it yet (waiting for my son to arrive!) -- but was wondering about the quantity of blueberries that you use. I used about 2 cups and think it may have been too many! Thanks for sharing!
